In this Stone Soup edition of Cookbook Club, Mona will guide participants in preparing vegetables for deeply flavorful, seasonal soups that nourish and satisfy. She is the author of Zuppe: Soups from the Kitchen of the American Academy in Rome and the founder and culinary director of Talbott & Arding, a beloved Hudson Valley culinary destination known for its large selection of fresh prepared foods and its carefully curated cheese counter.
Together, we will make two very large pots of soup: a vegan winter minestrone inspired by the Galileo soup in Zuppe, and a gluten-free chickpea, squash, and cabbage soup from the forthcoming Talbott & Arding Cookbook. Columbia Kitchen will pack any leftover soup to stock local Free Fridges.
In the spirit of Stone Soup, each participant is asked to sign up and bring one or two ingredients—onions, potatoes, winter squash, parsley, and the like (stones optional!). Together, we’ll cook something far more delicious than anything made alone. Aprons, knives, and cutting boards will be supplied!
